Cheesy Herb Chicken and Broccoli Casserole

Ingredients

2 lbs boneless chicken breasts
2 cups broccoli florets
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
4 tbsp butter
4 tbsp all-purpose flour
2 cups milk
1 cup sharp cheddar cheese, shredded
1/2 cup parmesan cheese, grated
1 tsp garlic powder
1/2 tsp onion powder
1 tbsp fresh thyme leaves
1/2 cup breadcrumbs
1 tbsp parsley, chopped

Instructions

1. Preheat oven to 375°F (190°C).
2. Season chicken breasts with salt and pepper.
3. In a skillet, heat olive oil and cook chicken until golden brown, about 5 minutes per side.
4. Remove chicken, let cool, then cut into bite-sized pieces.
5. In a pot, melt butter over medium heat, add flour and cook for 1 minute.
6. Gradually whisk in milk, cooking until thickened.
7. Stir in cheddar and parmesan cheese, garlic powder, onion powder, and thyme; mix until smooth.
8. In a large bowl, combine chicken, broccoli, and cheese sauce.
9. Transfer mixture to a greased casserole dish, top with breadcrumbs and parsley.
10. Bake for 25 minutes or until golden and bubbly.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F (175°C) for 10-15 minutes or until warmed through. Alternatively, microwave on high for 2-3 minutes.
