Cheesy Garlic Herb Mashed Potato Casserole

Ingredients

4 lbs russet potatoes
1 cup whole milk
1/2 cup unsalted butter
2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
4 cloves garlic, minced
2 tbsp fresh chives, chopped
1 tbsp fresh thyme leaves
1 tsp salt
1/2 tsp black pepper
1/2 cup breadcrumbs

Instructions

1. Preheat the oven to 375°F (190°C).
2. Peel and dice the potatoes into 1-inch cubes.
3. Boil the potatoes in a large pot of salted water until tender, about 20 minutes.
4. Drain the potatoes and return them to the pot.
5. In a small saucepan, heat the milk, butter, and garlic until the butter is melted and garlic is fragrant.
6. Mash the potatoes with the garlic-butter mixture until smooth.
7. Stir in the cheddar cheese, Parmesan cheese, chives, thyme, salt, and pepper.
8. Transfer the mashed potatoes to a greased 9x13-inch baking dish.
9. Sprinkle the breadcrumbs evenly over the top.
10. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
11. Let it cool slightly before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place individual portions in a microwave-safe dish and microwave on medium heat for 1-2 minutes, or until heated through. Alternatively, cover the casserole dish with foil and reheat in a 350°F (175°C) oven for 15-20 minutes.
