Cheesy Bacon Potato Casserole

Ingredients
6 medium russet potatoes
1 lb bacon
1 cup sour cream
1 cup cheddar cheese, shredded
1 cup mozzarella cheese, shredded
1/2 cup green onions, chopped
1/4 cup unsalted butter
Salt and pepper to taste
Instructions
1. Preheat the oven to 375°F (190°C).
2. Peel and slice the potatoes into thin rounds.
3. Cook bacon in a skillet over medium heat until crispy, then crumble.
4. In a large bowl, combine sour cream, cheddar cheese, mozzarella cheese, and butter.
5. Add sliced potatoes, crumbled bacon, and green onions to the bowl, and mix well.
6. Season with salt and pepper to taste.
7. Transfer the mixture to a greased 9x13-inch baking dish.
8. Cover with foil and bake for 45 minutes.
9. Remove foil and bake for an additional 15 minutes or until the top is golden and bubbly.
10. Let it cool for a few minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F (175°C) for 10-15 minutes or until heated through.
