Cauliflower Tater Tots

Ingredients
1 medium head cauliflower, chopped
1/2 cup breadcrumbs
1/2 cup grated Parmesan cheese
1 large egg
1 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley
Olive oil spray
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Steam the cauliflower until soft, about 5-7 minutes, then let it cool slightly before chopping finely or pulsing in a food processor.
3. In a large bowl, combine the chopped cauliflower, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, pepper, and parsley. Mix until well combined.
4. Shape the mixture into small tot-sized cylinders, about 1 inch long.
5. Place the tots on the prepared baking sheet and lightly spray with olive oil.
6. Bake in the preheated oven for 20-25 minutes, turning halfway through, until golden brown and crispy.
7. Serve warm with your favorite dipping sauce.
Storage
Store leftover cauliflower tater tots in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place the tots on a baking sheet in a preheated 350°F (175°C) oven for 5-7 minutes until heated through and crisp.
