Cauliflower Mashed Potatoes

A healthier twist on a classic side dish, these cauliflower mashed potatoes are creamy, flavorful, and satisfying. Infused with garlic and fresh herbs, they pair wonderfully with any holiday roast, offering a delicious yet guilt-free indulgence.

Ingredients

1 large head of cauliflower
2 large russet potatoes, peeled and cubed
3 cloves garlic, minced
2 tablespoons unsalted butter
1/4 cup milk
1/4 cup Parmesan cheese, grated
Salt and pepper to taste
2 tablespoons fresh chives, chopped
1 tablespoon fresh parsley, chopped

Instructions

1. Bring a large pot of salted water to a boil. Add the cauliflower florets and potato cubes, cooking until both are tender, about 15 minutes.
2. Drain the cauliflower and potatoes well, then return them to the pot.
3. In a small saucepan, melt the butter over medium heat and add minced garlic. Sauté until fragrant, about 1 minute.
4. Add the melted garlic butter to the cauliflower and potatoes.
5. Pour in the milk and add the Parmesan cheese.
6. Use a potato masher or an immersion blender to mash the mixture until smooth and creamy.
7. Season with salt and pepper to taste.
8. Stir in the chopped chives and parsley.
9. Serve warm, garnished with additional herbs if desired.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the microwave or on the stovetop over low heat, stirring occasionally, until heated through.
