Ingredients

1 medium cauliflower head, cut into florets
1/2 cup all-purpose flour

1 large egg, beaten
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons olive oil
Fresh basil, for garnish

Instructions

1. Begin by steaming the cauliflower florets until they are tender, about 10 minutes.
2. Transfer the steamed cauliflower to a clean kitchen cloth, let it cool slightly, then wring out as much moisture as possible.
3. In a food processor, combine the drained cauliflower, flour, Parmesan, egg, salt, and pepper. Process until a dough forms.
4. On a floured surface, divide the dough into four equal pieces and roll each into a 1/2-inch thick rope.
5. Cut each rope into 1-inch pieces, then press down lightly with a fork to create ridges.
6. In a large skillet over medium heat, warm olive oil. Cook the gnocchi in batches, ensuring they are lightly browned on all sides, about 3-4 minutes per batch.
7. Serve immediately with your choice of sauce and garnish with fresh basil.

Storage

Store any leftover gnocchi in an airtight container in the refrigerator for up to 3 days.

To reheat, gently warm in a skillet over medium heat until heated through, or in a microwave-safe dish for about 1-2 minutes.
