Ingredients
2 cups dried white beans
1 lb pork shoulder, cut into 2-inch pieces
1/2 lb duck confit
1/2 lb Toulouse sausage or other pork sausage
1/4 lb thick-cut bacon, diced
1 onion, chopped
2 carrots, sliced
4 cloves garlic, minced
1 bouquet garni (thyme, bay leaf, parsley)
4 cups chicken broth
Salt and pepper to taste
1/2 cup bread crumbs
Instructions
1. Soak the white beans overnight in cold water, then drain and rinse.
2. Preheat your oven to 325°F (163°C).
3. In a large oven-safe pot, cook the bacon over medium heat until crispy. Remove and set aside.
4. In the same pot, brown the pork shoulder pieces and sausages in the bacon fat, then remove and set aside.
5. Add onion, carrots, and garlic to the pot, sautéing until soft.
6. Stir in the beans and bouquet garni, then add the meats back into the pot.
7. Pour in the chicken broth, ensuring the beans and meat are submerged.
8. Season with salt and pepper, bring to a simmer, then cover and transfer to the oven.
9. Bake for 2 hours, occasionally stirring, until beans are tender.
10. Remove lid, sprinkle bread crumbs over the top, and bake uncovered for an additional 30 minutes until the top is golden and bubbly.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently over low heat on the stove, or in a 325°F oven until warmed through.
