Caribbean Pineapple Fried Rice

Ingredients
2 tbsp coconut oil
1 cup diced pineapple
1 red bell pepper, diced
1 small onion, chopped
2 cloves garlic, minced
3 cups cooked jasmine rice
2 tbsp soy sauce
1 tbsp jerk seasoning
1 cup cooked shrimp
2 green onions, sliced
1/4 cup chopped fresh cilantro
1 lime, cut into wedges
Instructions
1. Heat coconut oil in a large pan over medium heat.
2. Add diced pineapple and cook until caramelized, about 5 minutes.
3. Stir in bell pepper, onion, and garlic, cook for another 3-4 minutes until vegetables are tender.
4. Add cooked jasmine rice, soy sauce, and jerk seasoning; mix well to combine.
5. Stir in cooked shrimp and continue to cook until heated through, approximately 3 minutes.
6. Remove from heat and garnish with green onions and fresh cilantro.
7. Serve hot with lime wedges on the side.
Storage
Store leftover fried rice in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat fried rice in a skillet over medium heat, adding a splash of water or broth to prevent sticking, until heated through.
