Caramelized Pecan Sweet Potato Casserole

Ingredients

4 lbs sweet potatoes, peeled and cubed
1/2 cup unsalted butter, melted
1/2 cup brown sugar
1/4 cup maple syrup
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 cup milk
1/2 cup chopped pecans
1/4 cup all-purpose flour
1/4 cup additional brown sugar for topping
1/4 tsp salt

Instructions

1. Preheat your oven to 350°F (175°C).
2. In a large pot, boil the cubed sweet potatoes until tender, about 15 minutes.
3. Drain the sweet potatoes and mash them in a large bowl.
4. Mix in melted butter, 1/2 cup brown sugar, maple syrup, vanilla extract, cinnamon, nutmeg, and milk until smooth.
5. Spread the sweet potato mixture into a greased 9x13 inch baking dish.
6. In a separate bowl, combine pecans, flour, additional brown sugar, and salt.
7. Sprinkle the pecan mixture evenly over the sweet potatoes.
8. Bake in the preheated oven for 30 minutes, or until the topping is golden brown and crunchy.

Storage

Store any leftover casserole in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place a serving of the casserole in the microwave on medium heat for 1-2 minutes until warmed through, or cover with foil and heat in a preheated oven at 350°F (175°C) for 10-15 minutes.
