Caramel Apple Sticky Toffee Pudding

Ingredients

For the pudding:
1 cup chopped dates
1 cup boiling water
1 tsp baking soda
1/4 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1/2 cup diced apples
For the toffee sauce:
1/2 cup unsalted butter
1/2 cup brown sugar
3/4 cup heavy cream
1 tsp vanilla extract

Instructions

1. Preheat your oven to 350°F (175°C) and grease a baking dish.
2. In a bowl, combine dates and boiling water. Add baking soda and let the mixture sit.
3. In another bowl, cream together butter and sugar until light and fluffy.
4. Beat in eggs one at a time.
5. Gradually mix in flour, baking powder, cinnamon, nutmeg, and salt.
6. Stir in the date mixture and fold in diced apples.
7. Pour the batter into the prepared baking dish and bake for 35 minutes or until a toothpick comes out clean.
8. For the toffee sauce, melt butter in a saucepan over medium heat. Stir in brown sugar and cream, bringing to a boil for 3 minutes. Remove from heat and stir in vanilla.
9. Pour warm toffee sauce over the baked pudding and let it soak before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual servings in the microwave for 30 seconds or until warmed through.
