2 large eggs

1/2 tsp ground nutmeg
1/2 tsp salt
3 cups old-fashioned oats
1 1/2 cups diced apples, peeled and cored
1 cup caramel bits

Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
3. Beat in eggs one at a time, then stir in vanilla.
4. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
5. Gradually add dry ingredients to the creamed mixture, mixing just until combined.
6. Stir in oats, diced apples, and caramel bits until evenly distributed.
7. Drop by rounded tablespoonfuls onto prepared baking sheets, spacing 2 inches apart.
8. Bake for 10-12 minutes or until edges are golden brown.
9. Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
