Calypso Bouillabaisse
Calypso Bouillabaisse is a tantalizing fusion of Caribbean and Mediterranean flavors, blending aromatic spices with fresh seafood to create a vibrant and unforgettable stew.

Ingredients
2 lbs mixed seafood (shrimp, scallops, clams)
1 lb cod fillet, cut into chunks
2 tbsp olive oil
1 large onion, chopped
4 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 jalapeño, seeded and minced
1 can (14 oz) diced tomatoes
1/2 cup white wine
2 cups fish stock
2 tsp ground coriander
1 tsp paprika
1/2 tsp saffron threads
Salt and pepper to taste
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion, garlic, red and green bell peppers, and jalapeño, sauté until soft.
3. Stir in coriander, paprika, saffron, salt, and pepper, cook for 2 minutes.
4. Add diced tomatoes, white wine, and fish stock, bring to a simmer.
5. Gently add mixed seafood and cod, cover and simmer for 10-12 minutes until seafood is cooked through.
6. Stir in cilantro, adjust seasoning if necessary.
7. Serve hot, garnished with lime wedges.
Storage
Store leftovers in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat gently in a saucepan over low heat until warmed through, adding a splash of fish stock if needed.
