Ingredients
2 cups long-grain white rice
1 tablespoon olive oil
1 large onion, diced
1 green bell pepper, diced
2 celery stalks, diced
4 garlic cloves, minced
1 teaspoon smoked paprika
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
2 (15-ounce) cans red beans, drained and rinsed
4 cups vegetable broth
2 bay leaves
Salt and pepper to taste
3 green onions, thinly sliced
1 tablespoon fresh parsley, chopped
Instructions
1. Rinse the rice under cold water and drain well.
2. In a large pot, heat olive oil over medium heat. Add onion, bell pepper, and celery, sauté until softened, about 5 minutes.
3. Stir in garlic, smoked paprika, thyme, oregano, and cayenne pepper; cook for 1 minute until fragrant.
4. Add the rinsed red beans and mix well.
5. Pour in the vegetable broth, add bay leaves, and season with salt and pepper.
6. Bring to a boil, then reduce heat to low. Cover and let simmer for 20 minutes.
7. Remove bay leaves and stir in the cooked rice.
8. Garnish with green onions and parsley before serving.
