Cajun Seafood and Andouille Sausage Gumbo

Ingredients

1/2 cup vegetable oil
1/2 cup all-purpose flour
1 large onion, chopped
1 green bell pepper, chopped
2 stalks celery, chopped
4 cloves garlic, minced
1 pound andouille sausage, sliced
1 pound shrimp, peeled and deveined
1 pound crab meat
6 cups chicken broth
2 bay leaves
1 tablespoon Cajun seasoning
1 teaspoon dried thyme
1 teaspoon smoked paprika
Salt to taste
1/2 teaspoon cayenne pepper
1/4 cup chopped fresh parsley
2 green onions, sliced
Cooked white rice, for serving

Instructions

1. In a large pot, heat the vegetable oil over medium heat and whisk in the flour. Cook, stirring constantly, until the roux is the color of chocolate, about 10-15 minutes.
2. Add the chopped onion, bell pepper, and celery to the roux, and cook, stirring, for about 5 minutes until the vegetables are tender.
3. Stir in the garlic and cook for another 1 minute.
4. Add the andouille sausage, shrimp, and crab meat to the pot. Cook for 5 minutes, stirring occasionally.
5. Pour in the chicken broth and add the bay leaves, Cajun seasoning, thyme, smoked paprika, salt, and cayenne pepper. Bring to a boil, then reduce the heat and simmer for 45 minutes, stirring occasionally.
6. Stir in the chopped parsley and green onions before serving.
7. Serve hot over cooked white rice.

Storage

Store the gumbo in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat the gumbo in a saucepan over medium heat until warmed through, stirring occasionally.
