Ingredients

2 lbs large shrimp, peeled and deveined
4 ears corn, each cut into 4 pieces
1 lb baby red potatoes
1 lb smoked sausage, sliced into 1-inch pieces
1/4 cup Cajun seasoning
2 lemons, juiced
2 tbsp olive oil
1/4 cup fresh parsley, chopped
1 tbsp fresh thyme, chopped
1 tbsp fresh oregano, chopped
1/2 cup butter, melted
Salt and pepper to taste

Instructions

1. Preheat oven to 400°F. Line a large baking sheet with parchment paper.
2. In a large pot, boil potatoes until just tender, about 10 minutes. Drain and set aside.
3. In a large bowl, combine shrimp, corn, sausage, boiled potatoes, and olive oil. Toss with Cajun seasoning, lemon juice, salt, and pepper.
4. Spread mixture evenly on prepared baking sheet. Roast in oven for 15 minutes.
5. Drizzle melted butter over the shrimp mixture. Sprinkle with fresh parsley, thyme, and oregano.
6. Roast for an additional 5 minutes until shrimp are cooked through and everything is golden.
7. Serve immediately with lemon wedges on the side.
