3 large green tomatoes
1 cup all-purpose flour
1 cup cornmeal
2 tsp Cajun seasoning
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
2 large eggs
1/2 cup buttermilk
Salt and pepper to taste
1 cup vegetable oil for frying
1/2 cup mayonnaise
1 tbsp Dijon mustard
1 tbsp lemon juice
1 tbsp hot sauce
1 tbsp chopped pickles
1 tbsp capers
1 tbsp chopped parsley

Instructions

1. Slice green tomatoes into 1/4-inch thick slices and season with salt and pepper.
2. In a shallow dish, mix flour with half of the Cajun seasoning, garlic powder, onion powder, and cayenne pepper.
3. In another shallow dish, whisk eggs and buttermilk together.
4. In a third dish, combine cornmeal with remaining Cajun seasoning.
5. Dredge each tomato slice in the flour mixture, then dip in the egg mixture, and finally coat with the cornmeal mixture.
6. In a large skillet, heat vegetable oil over medium-high heat until shimmering.
7. Fry the tomato slices in batches until golden brown and crispy, about 3 minutes per side. Drain on paper towels.
8. For the remoulade, combine mayonnaise, Dijon mustard, lemon juice, hot sauce, pickles, capers, and parsley in a bowl, mixing well.
9. Serve the fried green tomatoes warm with the spicy remoulade sauce on the side.
