Brussels Sprouts with Bacon and Chestnuts

Ingredients

1 lb Brussels sprouts, trimmed and halved
4 oz bacon, chopped
6 oz roasted chestnuts, chopped
2 tbsp olive oil
1 clove garlic, minced
Salt and pepper to taste
1 tbsp balsamic vinegar
1 tbsp fresh parsley, chopped

Instructions

1. Heat olive oil in a large skillet over medium heat.
2. Add chopped bacon and cook until crispy, about 5 minutes.
3. Remove bacon with a slotted spoon and set aside.
4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
5. Add Brussels sprouts and cook, stirring occasionally, until they begin to brown, about 8-10 minutes.
6. Stir in chestnuts, cooked bacon, salt, and pepper.
7. Drizzle with balsamic vinegar and sauté for an additional 2-3 minutes.
8. Remove from heat and sprinkle with fresh parsley before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through, or in the microwave for 1-2 minutes.
