Broccoli and Cauliflower Bake

Ingredients
1 head of broccoli, chopped
1 head of cauliflower, chopped
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups whole milk
1 cup sharp cheddar cheese, shredded
Salt to taste
Black pepper to taste
1/2 cup breadcrumbs
2 tablespoons parmesan cheese, grated
Instructions
1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
2. Steam the broccoli and cauliflower until just tender, about 5 minutes.
3. In a saucepan, melt the butter over medium heat, then whisk in the flour to form a roux.
4. Gradually whisk in the milk, stirring constantly until the sauce thickens.
5. Remove the sauce from heat and stir in the cheddar cheese until melted and smooth.
6. Season the sauce with salt and pepper to taste.
7. Combine the steamed vegetables with the cheese sauce in a large bowl.
8. Transfer the mixture to the prepared baking dish.
9. In a small bowl, mix breadcrumbs and parmesan cheese, then sprinkle over the casserole.
10. Bake for 25-30 minutes or until the top is golden brown and the edges are bubbly.
11. Let it cool for a few minutes before serving.
Storage
Store the leftover casserole in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual portions in the microwave for 1-2 minutes or until heated through. Alternatively, cover the baking dish with foil and reheat in the oven at 350°F (175°C) for 15-20 minutes.
