3 cups chicken broth
3 cups fresh broccoli florets
2 cups aged cheddar cheese, shredded
1 cup heavy cream
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground nutmeg

Instructions

1. Melt the butter in a large pot over medium heat.
2. Add the onion and garlic, sauté until softened, about 5 minutes.
3. Stir in the flour, cooking for 1 minute.
4. Gradually whisk in the chicken broth, ensuring no lumps remain.
5. Add the broccoli, bring the mixture to a simmer, and cook until tender, about 10 minutes.
6. Blend the soup until smooth using an immersion blender or in batches with a countertop blender.
