Broccoli Almond Soup

A creamy and nutty broccoli almond soup that combines fresh broccoli with the richness of almonds to create a comforting, healthy dish perfect for any season.

Ingredients

2 cups broccoli florets
1/2 cup sliced almonds
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1/2 cup heavy cream
Salt and pepper to taste
1/4 tsp nutmeg

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until the onion is translucent.
3. Stir in almonds and cook for another 2 minutes.
4. Add broccoli florets and vegetable broth, bring to a boil.
5. Reduce heat and simmer for 15 minutes until broccoli is tender.
6. Blend the soup using an immersion blender until smooth.
7. Stir in heavy cream, nutmeg, salt, and pepper. Simmer for an additional 5 minutes.
8. Serve hot garnished with additional sliced almonds.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over medium heat, stirring occasionally, until heated through.
