Broccoli & Cheddar Delight

Experience a twist on the traditional broccoli casserole with a blend of sharp cheddar and crunchy breadcrumb topping, perfect for a family dinner.

Ingredients

2 lbs fresh broccoli florets
1 cup shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup mayonnaise
1/2 cup sour cream
2 large eggs, beaten
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 cup cracker crumbs
1/4 cup melted butter
Salt and pepper to taste

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
2. Steam the broccoli florets for about 5 minutes until bright green and tender-crisp, then drain and set aside.
3. In a large mixing bowl, combine the cheddar cheese, Parmesan cheese, mayonnaise, sour cream, beaten eggs, garlic powder, onion powder, salt, and pepper until smooth.
4. Fold the steamed broccoli into the mixture, ensuring it’s evenly coated.
5. Transfer the mixture to the prepared baking dish and spread it evenly.
6. In a small bowl, mix the cracker crumbs with the melted butter and sprinkle over the top of the casserole.
7. Bake for 30-35 minutes until the top is golden brown and the casserole is bubbly.
8. Let it cool for 5 minutes before serving.

Storage

Store any leftovers covered in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 325°F (160°C) for 15-20 minutes until heated through.
