Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1/4 cup brown sugar
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1 teaspoon vanilla extract
2 cups fresh blueberries
2 tablespoons lemon juice
1 tablespoon cornstarch
1/4 cup confectioners’ sugar for dusting
Instructions
1. Preheat your oven to 350 degrees F (175 degrees C) and grease a 9x13 inch baking pan.
2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in the eggs one at a time, then stir in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking powder, and salt, then gradually mix into the creamed mixture.
5. Spread 2/3 of the dough into the prepared baking pan, pressing down evenly to form the crust.
6. Toss the blueberries with lemon juice and cornstarch, then spread evenly over the crust.
7. Crumble the remaining dough over the blueberry layer.
8. Bake for 30-35 minutes, or until the top is golden brown.
9. Allow to cool completely before cutting into bars and dust with confectioners’ sugar.
Storage
Store bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
Reheating
To reheat, bake in a 350 degrees F oven for 5-10 minutes until warmed through.
