BLT Avocado Pasta Salad

Our BLT Avocado Pasta Salad is a delicious and refreshing twist on the classic BLT sandwich, combining crisp bacon, juicy tomatoes, and creamy avocado with tender pasta for a delightful side dish perfect for any gathering.

Ingredients

8 oz rotini pasta
1 lb bacon, cooked and crumbled
1 pint cherry tomatoes, halved
2 avocados, diced
1/2 cup mayonnaise
1 tbsp lemon juice
1/4 cup chopped fresh basil
Salt and pepper to taste

Instructions

1. Cook the rotini pasta according to package instructions. Drain and let cool.
2. In a large bowl, combine the cooked pasta, crumbled bacon, halved cherry tomatoes, and diced avocados.
3. In a small bowl, whisk together the mayonnaise, lemon juice, chopped basil, salt, and pepper.
4. Pour the dressing over the pasta mixture and toss gently to combine.
5. Chill in the refrigerator for at least 30 minutes before serving.

Storage

Store the salad in an airtight container in the refrigerator for up to 3 days.

Reheating

Enjoy the salad cold, or if desired, let it sit at room temperature for 10-15 minutes before serving.
