Black Bean and Mango Salsa

Ingredients

1 can (15 oz) black beans, drained and rinsed
1 ripe mango, peeled, pitted, and diced
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 jalapeño, seeded and minced
1 lime, juiced
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground cumin

Instructions

1. In a large mixing bowl, combine the black beans, mango, red bell pepper, red onion, cilantro, and jalapeño.
2. In a small bowl, whisk together the lime juice, olive oil, salt, black pepper, and cumin.
3. Pour the dressing over the black bean mixture and toss gently to combine.
4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
5. Serve chilled with tortilla chips or as a topping for grilled chicken or fish.

Storage

Store in an airtight container in the refrigerator for up to 3 days.
