Berry and Spinach Salad with Poppy Seed Dressing

Ingredients

6 oz fresh spinach
1 cup sliced strawberries
1 cup blueberries
1/2 cup raspberries
1/4 cup crumbled feta cheese
1/4 cup sliced almonds
1/3 cup extra-virgin olive oil
3 tbsp apple cider vinegar
2 tbsp honey
1 tbsp poppy seeds
1/2 tsp Dijon mustard
Salt and pepper to taste

Instructions

1. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, poppy seeds, Dijon mustard, salt, and pepper to create the dressing.
2. In a large salad bowl, combine spinach, strawberries, blueberries, and raspberries.
3. Drizzle the poppy seed dressing over the salad and toss gently to combine.
4. Top the salad with crumbled feta cheese and sliced almonds before serving.

Storage
