Beet and Berry Sorbet
Refreshing and vibrant, this sorbet combines the natural sweetness of beets with the tartness of mixed berries. It's a perfect treat for hot summer days, offering a burst of flavor with every bite.

Ingredients
1 lb fresh beets, peeled and diced
2 cups mixed berries (such as strawberries, blueberries, raspberries)
1/2 cup granulated sugar
1/4 cup water
1 tbsp lemon juice
Pinch of salt
Instructions
1. In a medium saucepan, combine the diced beets, water, and sugar. Cook over medium heat until the beets are tender, about 20 minutes.
2. Remove from heat and allow to cool slightly. Add the mixed berries and blend until smooth using a blender or an immersion blender.
3. Stir in lemon juice and a pinch of salt. Taste and adjust sweetness if necessary.
4. Pour the mixture into a shallow dish and freeze for about 2 hours, or until the edges start to firm up.
5. Scrape the frozen edges with a fork and mix into the center. Repeat this process every 30 minutes until the sorbet is firm and consistent in texture, about 3-4 hours total.
6. Transfer the sorbet to an airtight container and freeze until ready to serve.
Storage
Store in an airtight container in the freezer for up to 2 weeks.
Reheating
No reheating necessary, serve directly from the freezer.
