Ingredients
1 beef fillet (about 2 lbs)
2 tbsp olive oil
Salt and pepper to taste
1 lb mushrooms, finely chopped
2 tbsp butter
2 tbsp Dijon mustard
8 slices of prosciutto
1 package of puff pastry
1 egg, beaten
Instructions
1. Preheat oven to 400°F.
2. Season the beef fillet with olive oil, salt, and pepper; sear in a hot pan until browned on all sides. Remove and let cool.
3. In the same pan, add butter and mushrooms; cook until moisture evaporates. Cool slightly and mix with Dijon mustard.
4. Lay prosciutto on a clean surface, spread mushroom mixture over, and place the beef on top. Wrap the prosciutto around the beef.
5. Roll out the puff pastry and wrap it around the beef, sealing the edges with beaten egg.
6. Brush the pastry with egg wash and place the seam side down on a baking sheet.
7. Bake for 25-30 minutes until pastry is golden brown. Let it rest for 10 minutes before slicing.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F until warmed through, about 10-15 minutes.
