Beef Stroganoff with Spiced Mushrooms

Ingredients
1.5 lbs beef sirloin, thinly sliced
2 cups cremini mushrooms, sliced
1 large onion, finely chopped
2 cloves garlic, minced
1 cup beef broth
1 cup sour cream
2 tbsp butter
2 tbsp olive oil
1 tbsp all-purpose flour
1 tsp smoked paprika
1/2 tsp ground nutmeg
1 tsp salt
1/2 tsp black pepper
1 tbsp Worcestershire sauce
1 tbsp fresh parsley, chopped
12 oz egg noodles
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Add the sliced beef and cook until browned on all sides. Remove and set aside.
2. In the same skillet, add butter and sauté onions and garlic until fragrant. Add mushrooms and cook until tender.
3. Sprinkle flour over the mushroom mixture and stir in smoked paprika, nutmeg, salt, and pepper.
4. Pour in beef broth and Worcestershire sauce, stirring until well combined. Bring to a simmer and let it thicken slightly.
5. Lower the heat and return the beef to the skillet. Stir in sour cream and gently mix until the beef is well coated with the sauce.
6. Cook the egg noodles according to package instructions. Drain and set aside.
7. Serve the beef and sauce over the egg noodles, garnished with fresh parsley.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over low heat, stirring occasionally until warmed through. Add a splash of beef broth if needed to maintain a creamy consistency.
