Beef Au Jus

A savory and aromatic beef au jus sauce perfect for enhancing the flavors of roast beef dishes.

Ingredients

2 lbs beef bones
1 large onion, quartered
2 carrots, chopped
2 celery stalks, chopped
6 cups water
2 cloves garlic, minced
2 bay leaves
1 tsp black peppercorns
Salt to taste
1 tbsp olive oil

Instructions

1. Preheat your oven to 400°F.
2. Arrange beef bones in a roasting pan and drizzle with olive oil. Roast for 25 minutes until browned.
3. In a large pot, add roasted bones, onion, carrots, celery, and garlic.
4. Pour in water and add bay leaves, peppercorns, and salt.
5. Bring to a boil then reduce heat and simmer for 3-4 hours.
6. Strain the liquid through a fine mesh sieve and discard solids.
7. Skim off excess fat from the top of the liquid.
8. Serve warm as a dip or sauce for beef.

Storage

Store the au jus in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently over low heat on the stovetop, stirring occasionally.
