BBQ Meatball Sub

Ingredients
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
1 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
1 cup BBQ sauce
4 sub rolls
4 slices of provolone cheese
2 tbsp olive oil
Fresh parsley for garnish (optional)
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper.
3. Mix until all ingredients are well incorporated. Form the mixture into 1-inch meatballs.
4. Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides, about 5 minutes.
5. Transfer meatballs to a baking dish, cover with BBQ sauce, and bake in the oven for 20 minutes.
6. Meanwhile, slice the sub rolls and lightly toast them.
7. Remove meatballs from the oven, place them in the sub rolls, and top with a slice of provolone cheese.
8. Return the subs to the oven for an additional 5 minutes, or until the cheese is melted.
9. Garnish with fresh parsley if desired, and serve warm.
Storage
Store leftover meatballs in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the meatballs in a microwave for 1-2 minutes or in an oven at 350°F (175°C) for 10 minutes until heated through.
