Banana Pancakes with Walnut Syrup

Ingredients

1 1/2 cups all-purpose flour
3 1/2 tsp baking powder

1 1/4 cups milk
1 egg
3 tbsp butter (melted)
2 ripe bananas (mashed)
1/2 cup walnuts
1/2 cup maple syrup
1/4 cup water
1/4 tsp cinnamon

Instructions

1. In a large bowl, sift together the flour, baking powder, salt, and sugar.
2. In another bowl, whisk together the milk, egg, and melted butter.
3. Stir the wet mixture into the dry ingredients until just combined.
4. Fold in the mashed bananas gently.
5. Preheat a frying pan over medium-high heat and lightly grease it.
6. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
7. Cook until pancakes are golden brown on both sides.
8. For the walnut syrup, combine walnuts, maple syrup, water, and cinnamon in a small saucepan.
9. Simmer over low heat for 5 minutes, stirring occasionally.
10. Serve pancakes warm with walnut syrup drizzled over them.

Storage

Store pancakes in an airtight container in the refrigerator for up to 3 days. Store walnut syrup in a separate container in the refrigerator for up to 1 week.

Reheating

Reheat pancakes in the microwave for 20-30 seconds or in a toaster oven until warm. Reheat walnut syrup in a saucepan over low heat until warmed.
