Baked Herb & Garlic Cheesy Potatoes

Ingredients

2 lbs russet potatoes
1 cup sharp cheddar cheese, shredded
1/2 cup Parmesan cheese, grated
1/4 cup unsalted butter
1/4 cup all-purpose flour
2 cups whole milk
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 head of garlic, roasted
1 tsp salt
1/2 tsp black pepper
1/4 cup breadcrumbs

Instructions

1. Preheat oven to 375°F (190°C).
2. Peel and slice potatoes into thin rounds.
3. In a saucepan, melt butter over medium heat, add flour, whisking continuously for 1-2 minutes.
4. Gradually add milk, whisking until smooth and thickened.
5. Stir in cheddar and Parmesan cheese until melted.
6. Add roasted garlic, rosemary, thyme, salt, and pepper to the sauce.
7. Layer half the potatoes in a greased baking dish, pour half the cheese sauce over.
8. Repeat with remaining potatoes and sauce.
9. Sprinkle breadcrumbs evenly over the top.
10. Bake for 45-50 minutes until golden and bubbly.
11. Let cool for 10 minutes before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 15-20 minutes or until heated through.
