Ingredients
2 slices of whole grain bread
1 ripe avocado, peeled and pitted
2 eggs
1/2 cup cherry tomatoes, halved
1/4 cup feta cheese, crumbled
1 tablespoon olive oil
Salt and pepper to taste
1 tablespoon white vinegar
Instructions
1. Toast the slices of whole grain bread until golden brown.
2. In a small saucepan, bring water to a gentle simmer and add the white vinegar.
3. Crack each egg into a small bowl and gently slide them into the simmering water.
4. Poach the eggs for about 3-4 minutes until the whites are set but the yolks remain runny.
5. Meanwhile, in a small bowl, mash the avocado with a fork and season with salt and pepper.
6. Spread the mashed avocado evenly over the toasted bread slices.
7. Top with cherry tomatoes and crumbled feta cheese.
8. Use a slotted spoon to remove the poached eggs from the water and place one on each slice of toast.
9. Drizzle with olive oil and add additional salt and pepper if desired before serving.
Storage
Store any leftover components separately in airtight containers in the refrigerator for up to 1 day. Bread should be stored at room temperature and toasted fresh when ready to eat.
Reheating
Reheat the poached egg by submerging it in hot water for 30 seconds. Toast the bread again before assembling.
