Ingredients

2 ripe avocados
1 can (13.5 oz) full-fat coconut milk
1/2 cup maple syrup or agave nectar
1 tablespoon lime juice
1 teaspoon vanilla extract
1/4 teaspoon salt

Instructions

1. Halve the avocados, remove the pits, and scoop the flesh into a blender.
2. Add the coconut milk, sweetener, lime juice, vanilla extract, and salt to the blender.
3. Blend until the mixture is smooth and creamy.
4. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, or pour into a shallow dish and freeze, stirring every 30 minutes until set.
5. Transfer to a lidded container and freeze for 4 hours or until firm.

Storage

Store in an airtight container in the freezer for up to 1 month.

Reheating

Allow the ice cream to sit at room temperature for 5-10 minutes to soften before serving. Re-blend if necessary to regain creaminess.
