Ingredients
2 ripe avocados
1 cup all-purpose flour
2 large eggs
1 cup breadcrumbs
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 lime, zested and juiced
1/2 cup mayonnaise
1 clove garlic, minced
Instructions
1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
2. Cut the avocados in half, remove the pit, and slice them into wedges.
3. Set up a breading station: place flour in one bowl, beaten eggs in another, and a mixture of breadcrumbs, salt, pepper, and paprika in a third bowl.
4. Dredge each avocado slice in flour, dip in egg, and coat with the breadcrumb mixture.
5. Place the breaded avocado slices on the prepared baking sheet and bake for 15-20 minutes or until golden brown and crispy.
6. Meanwhile, prepare the lime aioli by mixing mayonnaise, lime juice, lime zest, and minced garlic.
7. Serve the avocado fries warm with the lime aioli on the side for dipping.
Storage
Store leftover avocado fries in an airtight container in the refrigerator for up to 2 days. Keep the lime aioli separately.
Reheating
To reheat, place the avocado fries in a preheated oven at 350°F for 5-7 minutes until warmed through and crispy again.
