Ingredients
1 3/4 cups all-purpose flour
1 cup pumpkin puree
1/2 cup unsalted butter, melted
1/2 cup maple syrup
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/4 cup chopped walnuts (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
2. In a large bowl, mix together the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
3. In another bowl, whisk the melted butter, maple syrup, and sugar until well combined.
4. Add the eggs and vanilla extract to the wet mixture and mix thoroughly.
5. Stir in the pumpkin puree until smooth.
6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
7. Fold in the chopped walnuts, if using.
8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
9. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
10. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Storage
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
Reheating
To reheat, slice and microwave on low for 20-30 seconds.
