Ingredients
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup vegetable oil
2 large eggs
1 cup canned pumpkin puree
1 teaspoon vanilla extract
1/4 cup buttermilk
1/3 cup chopped pecans
Instructions
1. Preheat the oven to 350°F and grease a 9x5-inch loaf pan.
2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
3. In another bowl, combine vegetable oil, eggs, pumpkin puree, vanilla extract, and buttermilk.
4. Add the wet ingredients to the dry ingredients and mix until just combined.
5. Fold in the chopped pecans.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Storage
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
Reheating
To reheat, microwave slices for 15-20 seconds or warm in a 300°F oven for 5-10 minutes.
