Autumn Harvest Succotash

Ingredients

2 tbsp olive oil
1 cup diced butternut squash
1 cup corn kernels (fresh or frozen)
1/2 cup diced red bell pepper
1/2 cup diced onion
1 cup cooked lima beans
1 tsp fresh thyme leaves
1/2 tsp smoked paprika
Salt and pepper to taste
2 tbsp chopped fresh parsley

Instructions

1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced onion and red bell pepper, sauté for 3-4 minutes until softened.
3. Stir in the butternut squash and cook for an additional 5 minutes.
4. Add the corn kernels and lima beans to the skillet, stirring to combine.
5. Season with fresh thyme leaves, smoked paprika, salt, and pepper.
6. Cook for another 5-7 minutes until the squash is tender and the flavors are well combined.
7. Garnish with chopped fresh parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat for 5-7 minutes until warmed through, or microwave on high for 2-3 minutes.
