Authentic Gulf Coast Gumbo

Ingredients
1 lb shrimp, peeled and deveined
1 lb andouille sausage, sliced
1 lb chicken thighs, cut into chunks
1 cup vegetable oil
1 cup all-purpose flour
1 large onion, diced
1 bell pepper, diced
2 stalks celery, diced
4 cloves garlic, minced
8 cups chicken broth
2 bay leaves
1 tbsp Worcestershire sauce
1 tbsp hot sauce
1 tsp dried thyme
1 tsp dried oregano
Salt and pepper to taste
2 cups okra, sliced
Cooked white rice for serving
Green onions, chopped for garnish
Fresh parsley, chopped for garnish
Instructions
1. In a large pot, heat oil over medium heat. Gradually whisk in flour to create a roux, stirring constantly until it turns a deep brown color, about 15-20 minutes.
2. Add the onion, bell pepper, and celery to the roux, cooking until the vegetables are tender, about 5 minutes.
3. Stir in the garlic and cook for another minute.
4. Slowly add the chicken broth, whisking to prevent lumps. Bring to a simmer.
5. Add the chicken, sausage, bay leaves, Worcestershire sauce, hot sauce, thyme, oregano, salt, and pepper. Simmer for 30 minutes.
6. Add the okra and continue to simmer for an additional 20 minutes.
7. Stir in the shrimp and cook until they are pink and opaque, about 5 minutes.
8. Serve over cooked white rice and garnish with green onions and parsley.
Storage
Store the gumbo in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stove over medium heat until warmed through, stirring occasionally.
