Authentic Creole Gumbo

Ingredients

1/2 cup all-purpose flour
1/2 cup vegetable oil
1 cup chopped onion
1 cup chopped bell pepper
1 cup chopped celery
4 cloves garlic, minced
1 pound andouille sausage, sliced
2 quarts seafood stock
2 bay leaves
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 pound shrimp, peeled and deveined
1 pound crab meat
2 cups okra, sliced
1/4 cup chopped fresh parsley
1/4 cup chopped green onions
4 cups cooked white rice

Instructions

1. In a large heavy pot, make a roux by whisking flour and oil over medium heat until it reaches a dark chocolate color.
2. Add onion, bell pepper, celery, and garlic to the roux and sauté until soft, about 5 minutes.
3. Add the sliced andouille sausage and cook for another 5 minutes.
4. Gradually stir in seafood stock, ensuring there are no lumps.
5. Add bay leaves, salt, black pepper, and cayenne pepper, and bring to a simmer for 30 minutes.
6. Add shrimp, crab meat, and okra, and cook for another 15 minutes, or until the seafood is cooked through.
7. Stir in parsley and green onions, and adjust seasoning if necessary.
8. Serve hot over cooked white rice.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stovetop over low heat, stirring occasionally, until heated through.
