Authentic Chicken Chow Mein

Ingredients
2 tbsp vegetable oil
1 lb boneless, skinless chicken breast, thinly sliced
2 cloves garlic, minced
1 tbsp fresh ginger, grated
1 onion, thinly sliced
1 bell pepper, thinly sliced
2 cups cabbage, shredded
1 cup carrots, julienned
8 oz chow mein noodles
1/4 cup soy sauce
2 tbsp oyster sauce
1 tsp sesame oil
2 green onions, chopped
1 tsp cornstarch
1/4 cup water
Instructions
1. Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Add the chicken slices and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.
2. In the same pan, add the remaining vegetable oil. Sauté the garlic and ginger until fragrant, about 30 seconds.
3. Add the onion, bell pepper, cabbage, and carrots to the pan. Stir-fry until the vegetables are tender-crisp, about 5 minutes.
4. Meanwhile, cook the chow mein noodles according to package instructions, drain, and set aside.
5. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch, and water.
6. Add the cooked chicken and noodles to the pan with the vegetables. Pour the sauce over and toss everything to combine well.
7. Cook for another 2-3 minutes until the sauce thickens slightly.
8. Garnish with chopped green onions before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat leftovers in a skillet over medium heat until heated through, adding a splash of water if needed.
