Auntie's Apple Pie

Ingredients
2 1/2 cups all-purpose flour
1 cup unsalted butter, chilled and diced
1/2 teaspoon salt
1/2 cup ice water
6 to 8 apples, peeled, cored, and sliced
3/4 cup granulated sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon lemon juice
1 tablespoon all-purpose flour
1 tablespoon butter
1 egg yolk
1 tablespoon milk
Instructions
1. Preheat your oven to 425°F (220°C).
2. In a large bowl, combine 2 1/2 cups of flour and 1/2 teaspoon salt. Cut in 1 cup diced butter until mixture resembles coarse crumbs. Stir in 1/2 cup ice water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight.
3. Roll out half of the dough to fit a 9-inch pie plate. Place the crust in the pie plate. Press the dough evenly into the bottom and sides of the pie plate.
4. In another bowl, combine sliced apples, 3/4 cup sugar, 2 teaspoons cinnamon, 1/2 teaspoon nutmeg, 1 tablespoon lemon juice, and 1 tablespoon flour. Toss to coat evenly.
5. Pour the apple mixture into the prepared crust. Dot with 1 tablespoon butter.
6. Roll out the remaining dough and place over the filling. Seal and flute the edges. Cut several slits in the top to allow steam to escape.
7. In a small bowl, mix 1 egg yolk with 1 tablespoon milk. Brush the mixture over the crust.
8. Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for 35 to 45 minutes, or until apples are soft and crust is golden brown.
9. Allow the pie to cool slightly before serving.
Storage
Store leftover apple pie covered in the refrigerator for up to 4 days.
Reheating
Reheat individual slices in the microwave for 20-30 seconds or warm the entire pie in a preheated oven at 325°F (165°C) for 10-15 minutes.
