Aromatic Biryani

Aromatic Biryani is a fragrant one-pot rice dish that features layers of marinated vegetables or meat, infused with aromatic spices and saffron. This traditional Indian dish is a delightful blend of flavors and textures, creating a symphony of taste that is both satisfying and memorable.

Ingredients

2 cups basmati rice
1 lb chicken or mixed vegetables
1 cup plain yogurt
2 onions, thinly sliced
3 tomatoes, chopped
1/2 cup cilantro, chopped
1/4 cup mint leaves, chopped
1/4 cup ghee
2 tbsp vegetable oil
1 tsp cumin seeds
5 cloves
4 cardamom pods
1 stick cinnamon
1/2 tsp turmeric powder
1 tsp red chili powder
1/2 tsp garam masala
1/4 cup milk
1/4 tsp saffron strands
Salt, to taste
4 cups water

Instructions

1. Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes. Drain and set aside.
2. In a large bowl, mix yogurt, turmeric, red chili powder, garam masala, and salt. Add chicken or mixed vegetables and marinate for at least 30 minutes.
3. Heat ghee and oil in a large pot over medium heat. Add cumin seeds, cloves, cardamom pods, and cinnamon stick. Sauté until fragrant.
4. Add sliced onions and sauté until golden brown.
5. Add chopped tomatoes and cook until they soften.
6. Add marinated chicken or vegetables and cook until chicken is cooked through or vegetables are tender.
7. In a small bowl, warm the milk and add saffron strands. Set aside.
8. In a separate pot, bring 4 cups of water to a boil. Add the soaked rice and partially cook for about 5 minutes. Drain the rice.
9. Layer half of the partially cooked rice over the chicken or vegetable mixture. Sprinkle with chopped cilantro, mint, and half of the saffron milk. Repeat with the remaining rice and saffron milk.
10. Cover the pot with a tight-fitting lid and cook on low heat for 20 minutes. Allow it to rest for 10 minutes before serving.

Storage

Store the biryani in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place biryani in a microwave-safe dish and heat in the microwave until hot. Alternatively, reheat in a covered pot on the stove over low heat.
