April: Asparagus and Lemon Pasta

Celebrate the peak of asparagus season with this delightful asparagus and lemon pasta. This dish is a refreshing combination of tender asparagus, zesty lemon, and perfectly cooked pasta, creating a light yet satisfying meal perfect for spring.

Ingredients

12 oz spaghetti
1 lb fresh asparagus, trimmed and cut into 2-inch pieces
3 tbsp olive oil
3 cloves garlic, minced
1 lemon, zested and juiced
Salt and pepper, to taste
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley

Instructions

1. Bring a large pot of salted water to a boil and cook spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water and drain.
2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
3. Add asparagus to the skillet and cook for 5-7 minutes until tender but still bright green.
4. Add cooked pasta to the skillet along with lemon juice, lemon zest, and reserved pasta water. Toss to combine.
5. Season with salt and pepper to taste. Stir in Parmesan cheese and parsley.
6. Serve immediately, garnished with extra Parmesan and parsley if desired.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently in a skillet over medium-low heat, adding a splash of water or broth to loosen the sauce, or microwave on medium power until heated through.
