Almond Delight Cake

Ingredients

1 cup unsalted butter
1 1/2 cups granulated sugar
4 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup almond milk
1/2 cup finely ground almonds
1/4 cup sliced almonds (for topping)

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition.
4. Stir in the vanilla extract.
5. In a separate bowl, whisk together the flour, baking powder, and salt.
6. Gradually add the dry ingredients to the wet mixture, alternating with the almond milk, starting and ending with the dry ingredients.
7. Fold in the finely ground almonds.
8. Pour the batter into the prepared cake pan and smooth the top.
9. Sprinkle the sliced almonds evenly over the batter.
10. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
11. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Storage

Store the almond cake in an airtight container at room temperature for up to 3 days.

Reheating

To reheat, warm slices in the microwave for 10-15 seconds or enjoy at room temperature.
