African Peanut Stew with Sweet Potatoes

Ingredients
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
1 inch ginger, grated
1 tsp cumin
1 tsp coriander
1/2 tsp cayenne pepper
3 cups vegetable broth
1 can (14 oz) diced tomatoes
1/2 cup natural peanut butter
2 large sweet potatoes, peeled and cubed
1 can (15 oz) chickpeas, drained and rinsed
2 cups kale or spinach, chopped
Salt and pepper to taste
1/4 cup chopped peanuts, for garnish
1/4 cup chopped cilantro, for garnish
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the onion and sauté until translucent, about 5 minutes.
2. Stir in the garlic, ginger, cumin, coriander, and cayenne pepper. Cook for 1-2 minutes until fragrant.
3. Add the vegetable broth, diced tomatoes, and peanut butter. Stir well to combine.
4. Add the sweet potatoes and bring the mixture to a simmer. Cook for 20 minutes or until the sweet potatoes are tender.
5. Stir in the chickpeas and kale/spinach. Cook for an additional 5 minutes until the greens are wilted.
6. Season with salt and pepper to taste. Serve hot, garnished with chopped peanuts and cilantro.
Storage
Store the stew in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat the stew on the stovetop over medium heat, stirring occasionally, until heated through.
